Jameson Orange Christmas Cake

 

Christmas is a joyous and special time that brings a certain warmth that no other time of the year does. As the festive season approaches, we fill our days with preparations, social events and family gatherings so that we can make the most of this time together. Sometimes, we get so wrapped up in lists that we miss the individual moments on the approach to the big day.

The lead up to the big day is just as important as the day itself; so slow down, take some time and enjoy making some memories this Christmas.

Whether it’s making the Christmas cake with the grandchildren, creating a wreath with your friends or popping on some seasonal music whilst wrapping up your loved ones gifts, make the most of the moment.

To help you get into the spirit, we’ve teamed up with our friends at Jameson to create a special twist on the traditional Christmas cake. Their Jameson Orange compliments seasonal flavours of nutmeg and cinnamon just perfectly with a lovely citrus punch. Find out how to create the cake here:

  

Ingredients

 

For pre-soaking

275ml Jameson Orange*

450g Raisins

225g Currants

75g Glace cherries

110g Candied peel

1-2 Oranges – grated zest

½ tsp Ground cinnamon

½ tsp Ground nutmeg

1 tsp Vanilla extract

 

For baking

250g Self raising flour

250g Demerara sugar

250g Unsalted softened butter

5 large eggs

Jameson Orange* for feeding

 

Method

1. Add your pre-soaking ingredients into a bowl, ensuring it is well covered and leave to soak overnight

2. When you are ready to bake your cake, pre-heat the oven to 140 degrees centigrade

3. Measure out your dry ingredients and sift them into a large bowl

4. Add your eggs into the dry ingredients and mix until all ingredients are evenly combined

5. Add your soaked fruits mixture and fold the ingredients together to ensure the fruit is distributed well

6. Spoon your mixture into a greased or lined tin, levelling the surface with the back of a spoon or spatula

7. Bake in the centre of the oven for 3 hours (although tempting, try not to open the door during this time)

8. After 3 hours, check to see if your cake is done. If not, pop back into the oven for a further 30 minutes and cover with a layer of greaseproof and foil

9. When the cake has a springy top and a clean cake tester, bring out of the oven and allow to cool in the tin for 45 minutes before transferring to a wire rack

10. Over the next few weeks, feed your cake with small amounts of Jameson Orange until you are ready to decorate

To decorate the cake

 

Once your cake is ready to decorate, put on some Christmas music and think about your desired design.

 

Ingredients

Golden marzipan

Royal icing

Apricot jam

3 Orange slices (use the orange from the cake recipe)

150g Granulated sugar

200ml Water

Icing sugar for dusting

Cinnamon sticks

 

You will also need twine and ribbon for finishing touches

 

Method

1. Put the sugar and water into the pan on a high heat until the sugar has dissolved, and the sugar syrup is translucent

2. Add the orange slices into the sugar syrup, bring to the boil and then cover with a lid on a slow simmer for 45 minutes

3. Remove the saucepan from the heat and leave the orange slices to call in the saucepan

4. Warm some apricot jam and brush the top of the Christmas cake

5. Roll out the marzipan to your desired thickness and use the base of your cake tin to cut round. Place the marzipan circle on the top of the cake

6. Brush another layer of apricot jam on top of the marzipan

7. Roll out the royal icing to your desired thickness and use the base of your cake tin to cut round. Place the royal icing circle on top of the marzipan

8. Once your orange slices are cool, add 3 of them to the top of your cake

9. Gather a couple of cinnamon sticks together and tie them with some twine, add this on top of the cake too

10. Dust with some icing sugar and use your ribbon to tie a bow around the middle of the cake
