Spring is a fantastic season; serving up the opportunity to taste the freshest flavours and an abundance of colour associated with the beginnings of summer. These dishes offer a delicious reason to dig in and enjoy this time of year.

Chef’s notes

"Spring is a really exciting time of the year for a chef – an abundance of fresh seasonal produce and lots of native British ingredients to work with. Spring lamb is at its best. Sea trout - if you’ve not tried this wild fish before, it is delicious, with a fresh and delicate taste. Fresh herbs – mint, rosemary and dill dial up all those Spring flavours. Then, my favourite dessert for a long time, elderflower posset with forest fruits – fragrant, light and delicate – the perfect end to a Spring meal."

Soy & sesame duck breast, duck wing and Chinese duck croquette, with stir-fried pak choi, mushrooms, spring onion and chilli with coriander and toasted sesame seeds with hoisin & blackberry sauce


Aberdeen Angus burger in a brioche bun with Stilton, crispy prosciutto, watercress, pickled red onion and apple cider chutney served with skin-on fries, crispy onion wedge and ale chutney


Spotted Dick Salted Caramel Apple Crumble


With fruits of the forest and mini shortbread fingers


Baked cookies with treacle toffee ice cream, white chocolate mousse, salted caramel sauce and crushed chocolate flake
